Vancouver excels at Asian cuisine, proof of which is provided nightly at the city's restaurants. Among many fine choices, we wouldn't let the Olympic torch darken without a visit to Vij's.
Since its 14-seat inception in 1994, it has become not just one of the best restaurants in Vancouver, but by most accounts one of the best Indian restaurants in the world. If you're looking for the usual suspects, you might be disappointed. But that's not likely. What Vij's does is apply Indian cooking techniques and spicing to freshly sourced, local ingredients. Sounds simple â€" yet, there aren't many other spots that produce such reliably delicious Indian-inflected food.
